Chilli con carne bean burger

Turn traditional chilli con carne into a snappy street food snack or dinner with these delicious chilli bean burgers.

Ingredients

Burgers

  • 2 spring onions chopped

  • 1 red chilli, deseeded and finely chopped

  • 400g kidney beans

  • 400g chickpeas

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 egg

  • Small handful of corriander

  • 1 tbsp salt

  • Black pepper

  • 1 tbsp flour for dusting

Toppings + bun

  • 4 brioche buns

  • Sprinkle of sesame seeds

  • Small handful of spinach

  • 1 tomato, thinly sliced

  • 4 gherkins, thinly sliced

  • 75g creme fraiche

  • 1/2 tsp of paprika

  • Sweet chilli sauce

Method

  1. Place the Burger ingredients into a food processor and blitz until a corse mixture forms.

  2. Devide the mixture into 4 and shape into 4 patties. Dust with flour and pop in the fridge for 10 minutes or up to an hour.

  3. Meanwhile mix the creme fraiche and paprika together.

  4. In a large frying pan add a little olive oil over a medium to high heat, add the patties and cook for 5 minutes on each side.

  5. Cut the buns in half, brush with a little olive oil and sprinkle your sesame seeds on top. Fill your buns with a layer of spinach, your bean burgers followed by sliced tomato, gherkins, chilli sauce and your paprika creme fraiche.

  6. Serve with skin on chips or sweet potato fries.
